Baking my Failures Away: Almond Yogurt Cake with Cinnamon Stewed Mandarin Slices

Holy crap! I had a horrible day. It has not been easy learning to fly a spinnaker. In general, there is a reason I’m often sequestered to the kitchen. I am not the best at sailing. With a steep learniimgres-1ng curve and surrounded by an expert crew, I cannot help but feel I’m falling short. Its not like I’m not pulling my wait, but I get tired of feeling like the scullery maid. After driving an accidental jibe the previous night and failing at steering the spinnaker, I woke up looking at another day. I decided to make my boyfriend’s recipe for banana pancakes. Sadly, the batter turned out horribly. I mean, come on! It’s pancakes. I’ve been flipping pancakes since I was old enough to hold a spatula. Well, at that point I just about broke down. So after a few hours of moping about, I decided to do something about it. I baked it out!

Almond Yogurt Cake with Cinnamon Stewed Mandarin Slices

For Cake:

Unsalted butter for greasing

1 c superfine sugar

1 ½ c flour

2 eggs

½ c plain greek yogurt

½ cup olive oil

1 tsp vanilla extract

½ tsp almond extract

1 c ground almond meal

1 lemon, zest and juice

Preheat oven to 350 degrees. Grease an 8 inch cake pan with butter then dust with salt and sugar. Beat the eggs in a medium sized bowl. Add the yogurt, sugar, lemon zest, lemon juice, olive oil and extracts. In a large bowl, stir the flour and almond meal. Make a well in the center and add the wet mixture. Stir until combined. Pour the batter into the prepared cake tin. Cook for 30 minutes. DO NOT open the oven in the first 20 minutes. Cook until you can skewer the cake with a toothpick and have it come out clean. Turn upside down on a plate

For the stewed mandarin slices:

10 mandarin oranges, peeled and segmented

1 cinnamon stick, cracked

1 ½ c water

1 ½ c sugar

Add the sugar to the water. Bring to boil stirring constantly until sugar completely dissolves. Add cinnamon stick and mandarin segments. Simmer for 20 minutes. Turn off heat, allow to sit for 1 hour. Drain (but keep the syrup for delicious cocktails) and serve the stew mandarin slices on cake with a scoop of greek yogurt.
